Veronique is the daughter of one of France's leading consultants for biodynamics, Fran\u00e7ois Bouchet. It was him who recommended the two to purchase the ch\u00e2teau in Bayon. The 16th century estate, which was largely abandoned at that time but which is actually pretty as a picture, has been one of the best wine estates in Bourg for long - and it is again today. The estate covers 20 hectares, half of which is on a terrace of clay and limestone. The planting density is 7,000 vines, the harvest no more than 40 hectoliters\/hectare. After a short, cool pre-fermentation, the grapes ferment with natural vineyard yeasts. Aging takes place in new and used barrels for 18 months. Cabernet Sauvignon dominates, followed by Cabernet Franc and a little Merlot.<\/p>\n<\/div>\n<h4>Colour<\/h4>\n<div>\n<p>dark purple<\/p>\n<\/div>\n<h4>Nose<\/h4>\n<div>\n<p>The <i>2016 Falfas<\/i> smells as elegant as juicy and cool. It is characterised by blackcurrants, a little elderberry and sour cherries, but also by tobacco and a little undergrowth. The currants bring their stalks, the sour cherries a little bit of their cherry stones, so that the fruit combines with a breath of vegetal but ripe notes as well as earthy-pitted notes.<\/p>\n<\/div>\n<h4>Palate<\/h4>\n<div>\n<p>On the palate the <i>Falfas<\/i> juicy, dark fruity and decidedly silky. It combines the pithy dark fruit with its typical punchy acidity, which surprises you again and again on the palate, because it provides additional drinking flow. The tannin is fine-grained and fits the Bordeaux like a tailor-made velvet glove.
