The perlage is highly intense with fine, persistent bubbles. The mousseux actively foams up and remains on the surface for minutes - a visual promise of the impressive maturity of this cava.<\/dd>\n<dt>Nose<\/dt>\n<dd>After 47 months on the lees, a fascinating interplay of flavours is revealed that deliberately restrains the fruit - a sign of class. <strong>Rose hip<\/strong>, <strong>Pomegranate<\/strong> and <strong>redcurrant<\/strong> blend with ripe wild raspberries and a hint of <strong>Sour cherry<\/strong>. The yeast autolysis flavours shine: <strong>Almond biscuits<\/strong>, <strong>Salt dough<\/strong> and fresh yeast plait with glazed almonds. Spicy accents of <strong>white pepper<\/strong>, The flavours of spices, allspice and Mediterranean herbal notes of sage and oregano lend complexity.
