The green fruit is more prominent than in the neighbouring Baudines, accompanied by a fine, elegant reduction that gives the wine additional depth.<\/dd>\n<dt>Palate<\/dt>\n<dd>The wine is ripe, juicy and seductive on the palate. The <strong>yellow fruit<\/strong> is sensual and slightly creamy with a subtle extract sweetness. At the same time, there is a savoury note, <strong>crisp minerality<\/strong> Chardonnay with impressive tension. The full development and expansion can only be guessed at the moment - enormous potential lies dormant here.<\/dd>\n<dt>Departure<\/dt>\n<dd>Persistently mineral with a fine salinity and vibrant freshness that will need years to reveal its full complexity.<\/dd>\n<dt>Terroir &amp; origin<\/dt>\n<dd>Les Embraz\u00e9es is located on the southern side of Chassagne-Montrachet, directly on the border with Santenay and below Les Baudines. The <strong>more reddish and barren soil<\/strong> characterises a richer style of wine than in higher-lying vineyards - a classic example of how terroir shapes character.<\/dd>\n<dt>Grape variety &amp; vinification<\/dt>\n<dd>100% <strong>Chardonnay<\/strong>, fermented with indigenous yeasts in a combination of neutral barrels and tanks. Malolactic fermentation is spontaneous and the wine matures on the lees without b\u00e2tonnage. Round <strong>20% new wood<\/strong> give a subtle structure. Particularly noteworthy: minimal addition of sulphur only in the last six months, never more than 35 mg\/l in total - a commitment to purity and precision.<\/dd>\n<dt>Food pairing suggestions<\/dt>\n<dd><strong>Lobster in butter<\/strong>, <strong>Fried scallops<\/strong>, <strong>Turbot with morel sauce<\/strong>, <strong>Poultry in cream sauce<\/strong> or <strong>matured Comt\u00e9<\/strong>.
