Fine spicy notes of <strong>Carnation<\/strong> and <strong>Cinnamon<\/strong> surround white-fleshed fruits, whereby <strong>Peach<\/strong> stands out in particular. A hint of wood integrates perfectly into the overall aromatic picture - typical of the region and wonderfully balanced.<\/dd>\n<dt>Palate<\/dt>\n<dd>Elegant and juicy, with silky density and a clear structure. The warmth of the vintage is reflected in a round fullness, but is counteracted by pleasant tension. <strong>Citrus notes<\/strong>, a touch <strong>Pineapple<\/strong>, again this fine gunpowder reduction and subtle wood spice. The minerality is slightly tingling, the body precisely polished. Lots of juice, beautiful length - a textbook example of a Village Chassagne.<\/dd>\n<dt>Departure<\/dt>\n<dd>Persistent and fresh with a fine minerality that invigorates the palate and invites you to take the next sip.<\/dd>\n<dt>Terroir &amp; origin<\/dt>\n<dd>The centrepiece is the plot <strong>Les Houill\u00e8res<\/strong>, supplemented by small portions from <strong>En Journoblot<\/strong> and declassified Premier Crus - a total of nine parcels. Les Houill\u00e8res is an extension of the famous Les Enceign\u00e8res vineyard on shallow, deep soils of a red clay-limestone mixture. The combination of white and red soils, young and old vines perfectly reflects the local character of Chassagne-Montrachet.<\/dd>\n<dt>Grape variety &amp; vinification<\/dt>\n<dd><strong>100% Chardonnay<\/strong> from a S\u00e9lection Massale planted in 1989. Fermentation with indigenous yeasts in neutral barrels and tanks, spontaneous malolactic fermentation, maturation on the lees without b\u00e2tonnage.
