These are joined by tart accents of <strong>Grapefruit peel<\/strong> and <strong>Anis<\/strong> - a successful balance between southern ripeness and Mediterranean freshness.<\/dd>\n<dt>Palate<\/dt>\n<dd>This white Ventoux is silky and charming on the palate, without slipping into opulence. A fascinating blend of <strong>white-fleshed fruits<\/strong>, <strong>Fennel seed<\/strong>, <strong>Anis<\/strong> and fine <strong>Herbal notes<\/strong> is supported by a mineral rock component. The wine has body and structure, but remains elegant and easy to drink.<\/dd>\n<dt>Departure<\/dt>\n<dd>Long and fine <strong>Saltiness<\/strong> which rounds off the wine perfectly and invites you to take another sip.<\/dd>\n<dt>Terroir &amp; origin<\/dt>\n<dd>The vines stand at a considerable height on the <strong>Mont Ventoux<\/strong>, where the coolness of the altitude ensures freshness and elegance. The over <strong>50 year old vines<\/strong> yielded just 15 hl\/ha - a reduction in yield that is reflected in concentration and complexity.<\/dd>\n<dt>Grape variety &amp; vinification<\/dt>\n<dd>A classic southern Rh\u00f4ne assemblage from <strong>Grenache Blanc<\/strong>, <strong>Clairette<\/strong> and <strong>Bourboulenc<\/strong>. Philippe Gimel vinified the wine in the <strong>Stainless steel<\/strong>, to preserve the fruit and freshness.
