These are joined by notes from <strong>Pear and apple tart<\/strong>, something <strong>Honeysuckle<\/strong> and <strong>Nutmeg<\/strong>, accompanied by fresh <strong>Apple peel<\/strong> and subtle yeast - complex and inviting.<\/dd>\n<dt>Palate<\/dt>\n<dd>Completely dry despite the aromatic nose. <strong>Racy acidity<\/strong> meets <strong>Yeast character<\/strong>, <strong>crumbly apple<\/strong> and <strong>Apple peel<\/strong>. In addition <strong>Orange and lemon cream<\/strong>, a touch <strong>Grapefruit<\/strong> and <strong>Lychee<\/strong>. The cool climate and mineral soils characterise the freshness and precision of this sparkling wine.<\/dd>\n<dt>Grape variety &amp; vinification<\/dt>\n<dd>Cuv\u00e9e from <strong>75% Donauriesling<\/strong> (Gr\u00fcner Veltliner) and <strong>25% Muscatel<\/strong>. Hand-picked in 20kg crates, whole bunch pressing, partial mash fermentation. <strong>Spontaneous fermentation<\/strong> in steel tanks, ageing in classic <strong>M\u00e9thode Ancestrale<\/strong> with six months on the lees.
