Vincent Rochette's white C\u00e9sar unfolds a beguiling aromatic spectrum<\/strong>which is typical of the southern Rh\u00f4ne. Ripe yellow fruits - Nashi pears and white peach - dominate at first, before being replaced by floral jasmine notes and subtle spicy nuances of fennel, coriander seed and aniseed. The woody note is present but not overpowering, with hints of vanilla that elegantly combine with Mediterranean herbs and a subtle mineral component.<\/p>\n On the palate, the winemaker's mastery is evident in the perfect balance between creamy texture and structuring acidity. The nine-month maturation in various wooden barrels gives the wine a velvety fullness and subtle vanilla and caramel flavours without masking the fruit expression. The natural extract sweetness of the ripe grapes is supported by a precise acid structure that gives the wine tension and length.
