The fine, highly tactful perlage builds up briefly but precisely - a visual foretaste of the precision craftsmanship of this house.<\/p>\n<h3>Nose<\/h3>\n<p>This is where <strong>Pure terroir<\/strong>. Maritime flavours dominate with oyster shell, sea spray and nori leaves - typical of the Catalan coastal locations. Herbal flavours of <strong>Sage, mint and thyme<\/strong> merge with exotic notes of lemongrass and ginger. The fruit is initially restrained: white peach, crisp yellow apples and bergamot zest. A tart, pithy character of almond and a subtle yeast note rounds off the complex bouquet.<\/p>\n<h3>Palate<\/h3>\n<p>A surprising intensity unfolds on the palate. The creamy mousseux ensures <strong>impressive enamel<\/strong>while the fruit is clearly riper: Baked apple, candied pear and stewed quince. The lively carbonic acid elegantly breaks through the mousseux and gives the wine its characteristic <strong>Slenderness and race<\/strong>. Delicate astringency encourages you to keep drinking - a classic sparkling wine of great elegance without unnecessary complexity.<\/p>\n<h3>General information<\/h3>\n<p>This cuv\u00e9e from <strong>55% Xarel-lo, 30% Macabeo, 10% Parellada and 5% Chardonnay<\/strong> benefited from the excellent 2021 vintage. Hand-picked grapes, separate vinification of the grape varieties and at least 18 months of ageing on the lees create the basis for this authentic cava. The dosage according to the family recipe completes the work.
