The 15-month maturation in French tonneau gives the wine a noble complexity without overpowering the primary Barbera fruit.<\/p>\n<h3>Palate<\/h3>\n<p>Disciplined and precise on the palate, the Pairolero displays the classic Barbera acidity in perfect balance. The opulent cherry fruit continues powerfully, while delicate tannins provide structure. The slightly rough, authentic texture makes this wine irresistibly drinkable - a dangerously empty glass is inevitable.<\/p>\n<h3>General information<\/h3>\n<p>Andrea Sottimano and his sisters have been running the family vineyard according to biodynamic principles since the 1960s. Spontaneous fermentation with their own yeasts, 25 days of maceration and natural malolactic fermentation - terroir is respected here. The wine is bottled unfined and unfiltered, which emphasises its authenticity.<\/p>\n<h3>Food pairing suggestions<\/h3>\n<p>This lively Barbera harmonises perfectly with <strong>Osso Buco alla Milanese<\/strong>, <strong>Brasato al Barolo<\/strong> or <strong>grilled lamb chops<\/strong>. Also to <strong>Pasta with wild boar rag\u00f9<\/strong> or <strong>matured Gorgonzola<\/strong> an excellent choice.
