The cabernet franc<\/strong>-The dominance is unmistakable: fresh raspberries and redcurrants meet subtle notes of red pepper and tobacco. The Syrah<\/strong> contributes peppery spice and a hint of bresaola. The flavours are precisely interwoven, never intrusive - a nose that entices you to inhale again and again.<\/p>\n The parcellaire rouge #1 reveals its true character on the palate: crisp, juicy, with firm berry fruit and an electrifying minerality that bears witness to the limestone-sandstone soils of the Weinviertel. The texture is fine and elegant, the tannins present but never dominant. Herbal notes and a stony coolness lend the wine depth and complexity. The subtle use of wood from old barrels supports without overpowering. With only 12.5% alcohol, the wine remains playfully light and proves that strength is not synonymous with alcohol content.<\/p>\n For his Parcellaire series, Johannes Zillinger deliberately chooses the coolest, wooded parcels of his oldest vineyards - north and north-east facing slopes that are exposed to the wind. The cuv\u00e9e of 62% Cabernet Franc and 38% Syrah was hand-picked on 1 October 2022. The Syrah underwent a three-day cold pre-fermentation, while both grape varieties fermented spontaneously in open vats. The wine was matured in old barrels. With only 25 mg\/l total sulphur, a pH value of 3.31 and 0.7 g residual sugar, this is a purist, unadorned wine.<\/p>\n The freshness and flavour of the wine harmonise perfectly with Beetle bean soup with pepper and piment d'Espelette<\/strong>. With stronger dishes such as Lamb Biryani<\/strong> or Chicken Vindaloo<\/strong> the wine shows its versatility - the lively acidity cuts through fat and spices.<\/p>\n A wine that proves that Austrian red wines can develop an independent, fresh style in a cooler climate.
