The nose begins with a wave <strong>dark berry fruit<\/strong>: <strong>Cassis<\/strong>, <strong>Morello cherry<\/strong> and <strong>Blackberry<\/strong> dominate, flanked by <strong>Sweet cherry<\/strong> and <strong>Rose hip<\/strong>. Dark floral aromas of <strong>Hibiscus<\/strong>, <strong>Pansies<\/strong> and <strong>Lilac<\/strong> lend an elegant, almost perfumed dimension. A Mediterranean flavour palette develops on contact with the air: <strong>black pepper<\/strong>, <strong>Juniper<\/strong>, <strong>Rosemary<\/strong> and <strong>black olive<\/strong>. Dried fruit such as <strong>Sultana<\/strong> and <strong>Date<\/strong> provide depth, while <strong>Cedar wood<\/strong>, <strong>Tobacco leaves<\/strong> and <strong>dark chocolate<\/strong> bring additional complexity.<\/dd>\n<dt>Palate<\/dt>\n<dd>Surprisingly elegant despite its fullness. After careful selection in the vineyard and at the sorting table, the grapes are completely destemmed and cold macerated before fermentation.
