The nose combines <strong>fresh grapes<\/strong>, <strong>Honeydew melon<\/strong> and <strong>Citrus<\/strong> with floral notes of <strong>Jasmine<\/strong> and <strong>Elderflower<\/strong>. Subtle herbal notes of <strong>Thyme<\/strong> and <strong>Mint<\/strong> hint at complexity, while the stony minerality becomes increasingly present with contact with the air - an indication of the terroir of the flint soils of Les Herses.<\/dd>\n<dt>Palate<\/dt>\n<dd>A creamy, juicy texture unfolds on the palate, which is the result of 30% ageing in 500-litre barrels without overpowering the fruit. The bright, subtly exotic fruit always remains elegant and restrained. The precise acidity lends structure, while the <strong>Salty minerality<\/strong> makes the wine exceptionally easy to drink - typical of the best Sancerre from Silex-Terroirs.<\/dd>\n<dt>Departure<\/dt>\n<dd>The finish is elegant and persistent, with a fine mineral persistence that invites you to take another sip.<\/dd>\n<dt>Terroir &amp; origin<\/dt>\n<dd>The Les Herses vineyard in M\u00e9n\u00e9treol-sous-Sancerre comprises two hectares with <strong>Clay and silex soils<\/strong> facing south-east. Planchon cultivates just under one hectare of 45-year-old Sauvignon Blanc vines, which produce concentrated grapes at a moderate yield of 50 hectolitres per hectare.<\/dd>\n<dt>Grape variety &amp; vinification<\/dt>\n<dd>100% <strong>sauvignon blanc<\/strong>, manual harvesting and gentle pneumatic pressing. After 36 hours of pre-clarification, the <strong>spontaneous fermentation<\/strong> to 70% in stainless steel tanks and 30% in 500-litre barrels. Ageing on the fine lees for ten to twelve months gives the wine texture and complexity.
