M\u00fcller, born in 1980 with a protected designation of origin Ulm, found his home in gastronomy after his Sturm &amp; Drang time and an aborted study of English, American studies and folklore.<br \/>\nFrom 2006 on, he first let Jan Bimboes &amp; Klaus Buderath (Landgasthof Adler*, Rammingen) show him the way. Afterwards, he was drawn to Schlosshotel Lerbach to Nils Henkel** &amp; Thomas Sommer. For six years, since 2013 as head sommelier, he enjoyed there the incentive to be stage designer for food and beverages to let them benefit from each other in the right light.<br \/>\nIn 2014 he was gratefully named \"Germany's Falstaff Sommelier of the Year\".<br \/>\nSince spring 2015, the much-travelled wine lover has been living in Burgenland in Austria and delights the guests of the restaurant Taubenkobel in Sch\u00fctzen am Gebirge with his laudations for the wines and plates.<\/p>\n<p>        <br clear=\"both\"><\/p>\n<\/div>\n<div>\n<h4>Color:<\/h4>\n<\/div>\n<div>The wine shows itself in intense straw yellow with golden reflexes and a discreet yeast cloudiness shining in the glass.<\/div>\n<div>\n<h4>Nose:<\/h4>\n<\/div>\n<div>Ready for the risk and dissolving traditional motifs, the Welschriesling Freyheit paints a new radiant picture of the supposed \"bread &amp; butter\" grape variety. With its head proudly held high, it displays a magnificent array of greenish-yellow fruit. Alongside grassy freshness of tarragon, fennel greens and lemon balm and ethereal herbal spice of coriander seeds and mustard seeds, the bouquet of this Welschriesling dresses itself with star fruit and kiwi. And real, ripe kiwi at that, as opposed to some E741 or the like that tries in vain to mimic the aromatic beauty of a kiwi.<\/div>\n<div>No, it's all real;<\/div>\n<div>and beguiling.<\/div>\n<div>\n<h4>Palate:<\/h4>\n<\/div>\n<div>Clear the air for a fresh start with the grit you need.<\/div>\n<div>Thanks to its fine, tightly woven tannins and yeast lees that imbibe freshness, the 2017 Welschriesling Freyheit from the Heinrich family departs from the supposed classic in terms of its appearance and passes on a direct and spontaneous interpretation of the Welschriesling grape.
