The soils are chalky with Kimmerdige and Portlandian limestone and the grapes are harvested by hand. After the harvest, the grapes are pressed directly and the must is fermented spontaneously in stainless steel fermenters. The Chablis is matured in classic perennial wooden barrels. After ageing, the wine is lightly filtered and sulphurised.<\/p>\n<\/div>\n<h4>Colour<\/h4>\n<div>\n<p>clear straw yellow<\/p>\n<\/div>\n<h4>Nose<\/h4>\n<div>\n<p>The <em>Chablis<\/em> has a subtle but charming scent of lemons with zest, a little salted lemon, iodine, lime and a hint of almonds and white flowers.<\/p>\n<\/div>\n<h4>Mouth<\/h4>\n<div>\n<p>On the palate, this is classic, fine, energetic <em>Chablis<\/em> with a shimmering minerality and an initially silky, then increasingly gripping acidity combined with a fine creaminess.
