After decanting, a fascinating palette of flavours reveals itself: intense <strong>Gooseberry<\/strong> and <strong>Passion fruit<\/strong> meet <strong>Cassis<\/strong>, <strong>wild mint<\/strong> and <strong>Stinging nettle<\/strong>. This is accompanied by notes of freshly ground <strong>white pepper<\/strong> and <strong>Elder wood<\/strong>. The compact minerality gives the bouquet an almost tangible presence.<\/p>\n<h3>Palate<\/h3>\n<p>Great winemaking skill unfolds on the palate: crystalline acidity, fine tannins and subtly integrated wood merge into a harmonious whole. Despite its expressiveness and structure, the wine appears surprisingly weightless - the moderate alcohol content of 12.5% contributes significantly to this. The long ageing on fine lees has given the wine a creamy texture and remarkable length.<\/p>\n<h3>General information<\/h3>\n<p>After selective manual harvesting and a short maceration period, the wine was fermented spontaneously. The subsequent 48-month maturation period is exceptional for a Sauvignon Blanc and gives it its unique profile. At 12.5% vol. it remains refreshing and elegant.<\/p>\n<h3>Food pairing suggestions<\/h3>\n<p>This multi-layered wine harmonises perfectly with <strong>Malfatti (ricotta dumplings with lemon spinach)<\/strong>, <strong>Red mullet with Sauvignon celeriac foam and a hint of coffee<\/strong> or <strong>Norway lobster with pumpkinism, pumpkin seed oil and roasted pumpkin seeds<\/strong>.
