The nose presents <strong>ripe apples<\/strong> and <strong>Pears<\/strong>, surrounded by <strong>nutty notes<\/strong> and a track <strong>Apple Tart<\/strong>. These are joined by a <strong>Spicy component<\/strong>, a touch <strong>Menthol<\/strong> and creamy <strong>Hints of cream<\/strong>, that lend complexity and depth.<\/dd>\n<dt>Palate<\/dt>\n<dd>Here the wine surprises with its <strong>Structure<\/strong> and <strong>Strength<\/strong>. An exciting interplay between southern opulence and cool precision.<\/dd>\n<dt>Grape variety &amp; vinification<\/dt>\n<dd>Hand-picked <strong>Chardonnay<\/strong>-grapes from the Roussillon, pressed directly and <strong>indigenous yeasts<\/strong> fermented. 10% were fermented in <strong>Oak barrels<\/strong> vinified, the rest in the <strong>Concrete container<\/strong> matured on the lees. <strong>Unfiltered<\/strong> and <strong>unembellished<\/strong> bottled - an authentic, artisanal approach that gives the wine texture and character.<\/dd>\n<dt>Food pairing suggestions<\/dt>\n<dd>The structure and flavour of the wine harmonise perfectly with <strong>White asparagus with smoked bacon, cream and mustard<\/strong>. Also to <strong>Marrow bones with chorizo<\/strong> or <strong>Smoked haddock tartare<\/strong> the Chardonnay reveals its strengths.
