The ageing in used wood blends in discreetly without dominating. This is accompanied by mineral notes and the seductive notion of <strong>Salted butter on fresh popcorn<\/strong> - Complex, balanced and full of character.<\/dd>\n<dt>Palate<\/dt>\n<dd>This is where the true nature of this Loire-Chenin is revealed: a <strong>shimmering acid<\/strong> stretches across the palate like an electric eel and drives the juicy yellow fruit before it. The balance of <strong>Extract, fruit and tannin<\/strong> is flawless - saline impressions alternate with a tannic contour on the tongue. A highly energetic, vital wine with impressive tension and enormous drinkability.<\/dd>\n<dt>Departure<\/dt>\n<dd>Long, mineral and carried by vibrant freshness. The acidity holds the fruit in perfect balance until the end.<\/dd>\n<dt>Terroir &amp; origin<\/dt>\n<dd>The vines are rooted in <strong>silty-clayey soil<\/strong> with <strong>Pebbles and red flint<\/strong> on a tufa base in Ambillou-Ch\u00e2teau. This mineral-rich terroir fundamentally characterises the wine and gives it its characteristic tension.<\/dd>\n<dt>Grape variety &amp; vinification<\/dt>\n<dd><strong>chenin blanc<\/strong> from vines planted in 2012, biodynamically cultivated according to the lunar calendar. Strict yield of only 28 hectolitres per hectare, hand-picked, spontaneous fermentation in <strong>Burgundy barrels<\/strong> (228 litres, fifth fermentation). Cellar master Sylvain Potin works with minimal intervention - the result is an authentic, terroir-influenced Chenin.<\/dd>\n<dt>Food pairing suggestions<\/dt>\n<dd>To <strong>Pike balls on spinach with crustacean sauce<\/strong>, <strong>Veal cutlet with fried chanterelles<\/strong> or <strong>Oven-baked fennel with saffron and figs<\/strong>.
