The average age of the Chardonnay vines there is 43 years. The vines are deeply rooted in belemnite chalk. The estate was in conversion to sustainable and organic viticulture. The first certified organic harvest was in 2020, and this cuv\u00e9e used 52 % from the 2020 harvest, plus 48 % from a r\u00e9serve perp\u00e9tuelle started in 1982, from which 40 % are taken and replenished each year. The base wine was fermented in temperature-controlled stainless steel tanks and underwent malolactic fermentation. The wine was bottled in May 2021, the champagne was disgorged in January 2023 exclusively for <em>Vinaturel<\/em> with a dosage of 5 grams.<\/p>\n<\/div>\n<h4>Colour<\/h4>\n<div>\n<p>Medium straw yellow with lively perlage<\/p>\n<\/div>\n<h4>Nose<\/h4>\n<div>\n<p>The <em>Brut R\u00e9serve Blanc de Blancs Grand Cru<\/em> leaves no doubt from the first moment that this is a Blanc de Blancs from the C\u00f4te de Blancs. It offers all the freshness and chalkiness that is typical and, in addition, already the fine autolysis notes that are also typical of matured Chardonnay champagnes. The <em>R\u00e9serve perp\u00e9tuelle<\/em> makes it possible. It smells of lemons, lemon curd and a little of tangerine. Added to this are crushed stone and herbs and, above all, slightly warm puff pastry. On top of that, there is a slightly iodiney note.<\/p>\n<\/div>\n<h4>Palate<\/h4>\n<div>\n<p>On the palate the <em>Non-Vintage<\/em> elegant and powerful at the same time. The perlage is finer than in its predecessor and enhances the <em>Brut R\u00e9serve<\/em> clearly on. The balance of fine sweetness from 5 grams of dosage and tart and stony element fits perfectly here. The <em>Champagne<\/em> appears juicy with citrus notes, stone and pome fruit. In addition, there is again some patisserie, in this case almond sponge cake and some white nougat.
