Colour & appearance<\/dt>\n
Light copper colour with remarkable clarity - significantly less cloudy than the previous vintage. The delicate copper colour immediately reveals the maceration time of this unconventional Sauvignon Blanc.<\/dd>\n
Nose<\/dt>\n
Discreet and charming at the same time: crunchy apples with skin<\/strong>, Reineclauden<\/strong> and Gorse<\/strong> form the aromatic core. These are joined by Hay<\/strong> and yeasty notes that are reminiscent of natural amphora wines, although the ageing took place in concrete. With a little warmth in the glass, seductive nuances of Acacia blossoms<\/strong> and Acacia honey<\/strong>.<\/dd>\n
Palate<\/dt>\n
This is where the orange shows its full personality: fresh and lively, but with the characteristic Tannin structure<\/strong> and phenolics of the 15-day mash fermentation. Apples<\/strong>, Apple peels<\/strong>, Herbs<\/strong>, a touch Ginger<\/strong> and Liquorice<\/strong> characterise the flavour. The acidity is silky and subtle, yet pleasantly carrying - a balance that is particularly remarkable with only 11% alcohol.<\/dd>\n
Terroir & origin<\/dt>\n
The vines have been rooted near Caudi\u00e8s-de-Fenouill\u00e8des in Roussillon since 2010 in a soil of Clay<\/strong>, Lime<\/strong> and something Slate<\/strong>. The organically farmed vineyard produced a modest yield of around 30 hl\/ha in 2022 - concentration due to natural yield reduction.<\/dd>\n
Grape variety & vinification<\/dt>\n
Pure sorter sauvignon blanc<\/strong>, hand-picked and fermented spontaneously as whole grapes on the skins for 15 days. Matured for several months in Concrete<\/strong>, filled without fining and filtration with minimal filling sulphur - pure minimalism.<\/dd>\n
Food pairing suggestions<\/dt>\n
Perfect for Fennel and orange salad with farmhouse bread<\/strong>, Aubergine hummus with feta and olives<\/strong> or Fried courgettes with anchovies<\/strong>. Its tannins and lively acidity make it the ideal accompaniment to Mediterranean vegetable dishes and oil-based preparations.<\/dd>\n
