Dark ruby red with a lively violet rim - a visual promise of youthful freshness and concentration.

This Bourgogne Rouge is remarkably complex: a spicy aroma of red pepper, Carnations and Allspice opens the bouquet, subtly accompanied by fine sandalwood notes from the restrained use of wood. An inviting fruit palette of ripe red berries unfolds underneath, Cherry pits and juicy dark mulberries. The balance between flavour and fruit is effortless - terroir-influenced Burgundy speaks with a clear voice.

The attack is dynamic and direct: tight, youthful tannins structure the wine with stimulating astringency and a fine phenolic texture. On the mid-palate, the tannins develop into a velvety melt, carried by ripe fruit and invigorating acidity. The wood character is present but integrated - a sign of the deliberately reduced new wood content of only 10-15%. The finish shows length and precision. A Pinot Noir with backbone and Burgundian elegance at an astonishingly fair price.

The Clos du Moulin aux Moines in Auxey-Duresses works biodynamically and with the utmost care: manual labour in the vineyards, horse-drawn ploughs instead of tractors, spontaneous fermentation in concrete vats. The vines, which are on average 40 years old, produce concentrated grapes with low yields of around 30 hl/ha. The wine is deliberately matured in larger wooden containers so as not to mask the transparent fruit and delicate vibration of the terroir.

The spicy structure and lively acidity make this Pinot Noir the ideal accompaniment to Grilled beetroot with goat's cheese cream and caraway crumble, Eel in red wine or Chicken with mushrooms from the oven.

A monopole vineyard wine from a thousand-year-old monastery tradition that combines Burgundian understatement with biodynamic philosophy - authentic, transparent and remarkably good value for this quality.

Palate
