\nIn the picturesque region of Siebeldingen, the soils are as diverse as they are enchanting, rich in different geological features ranging from Rotliegendes and Buntsandstein to Muschelkalk. The vines for this particular Chardonnay adorn loess and shell limestone soils - soil types that have shaped thousands of years. Blown in during the Ice Age, fine layers of loess, an ochre-yellow coloured, limestone-rich silt, were deposited in the depressions of the region. <\/p>\n
The grapes are hand-picked with care and destemmed before macerating for 24 hours. The gentle juicing is followed by natural sedimentation, which results in clear must. The wine then ferments mostly in new barrique barrels, made from French and Palatinate oak. After maturing on the full lees for nine months, the Chardonnay is drawn off and bottled. <\/p>\n
