Wine information

This drop is obtained by careful hand harvesting, followed by careful selection and traditional treading of the grapes. A maceration period allows the aromas to develop intensively before the whole spontaneous fermentation sets in. Maturation takes place in wooden barrels and is rounded off by long ageing on the full lees.

Colour scheme

Bright golden yellow shines in the bottle, interspersed with soft reflections reminiscent of liquid silver.

Fragrances

The Riesling VDP.Gutswein of the 2021 vintage is a true freshness cure for the senses. The top note is dominated by green apple, citrus fruit, grapefruit and apple peel. After a little time, subtle slate and earthy tones spread out, bringing out the wine's simple honesty. Its characteristic purism is played with and it plays along willingly.

Gustatory experiences

Arriving on the palate, the white wine shows itself with a fine and at the same time invigorating acidity, fine fruit notes and sweetness. Mineral and slightly salty notes already stand out remarkably in Kai Schätzel's entry wine. Calm and elegant dishes with a presence of herbs and spices like to join this Riesling, which stands out for its clear direction and precision.

Culinary guide

Instead of wild herb ravioli with rye, linseed oil and nettle broth, I recommend spinach gnocchi with walnut pesto. As an alternative to trout with cauliflower and black cumin, I suggest grilled salmon with beetroot salad. And as a creative substitute for the cold pea soup with Parma ham crostini, try a gazpacho with toasted ciabatta.
