Bright old gold with brilliant reflections, this wine presents itself in the glass - radiantly clear and of impressive intensity, which already promises concentration and maturity visually.<\/p>\n
The nose unfolds in fascinating layers: fresh dates<\/strong> and Dried figs<\/strong> form the fruity core, framed by the finest Candied orange peel<\/strong>. Then come Bergamot<\/strong> and pickled ginger<\/strong> while spicy notes of light-coloured tobacco<\/strong>, Linseed oil<\/strong> and a trace Shellac<\/strong> complexity and depth. This complexity is remarkable.<\/p>\n On the palate, the wine shows its true greatness: the fruit becomes more intense, Dried fruit<\/strong>, Apricots<\/strong> and Candied orange peel<\/strong> merge with Acacia honey<\/strong> and are used by Orange blossom water<\/strong> elegantly rounded off. The texture is creamy, almost viscous, with 265 grams of residual sugar, perfectly balanced by spicy oak notes. The finish is long, orchestral and impressively persistent.<\/p>\n This cuv\u00e9e mainly combines Malvasia<\/strong> with Verdejo<\/strong>, Albillo<\/strong>, Moscatel<\/strong> and Palomino<\/strong> from vines between 35 and 100 years old. After the harvest, the grapes are dried in the open air - an elaborate process reminiscent of passito wines. The subsequent 48-hour pressing and ten-month fermentation in French barriques, followed by 36 months of ageing, create exceptional concentration with only 10.5% alcohol.<\/p>\n This wine is more versatile than you might think: classic with Foie gras terrine<\/strong>surprisingly harmonious Oysters<\/strong>, whose saltiness contrasts perfectly with the sweetness. Also to Blue Cheese<\/strong>, Walnut cake<\/strong> or simply to high-quality Trail mix<\/strong> a pleasure.<\/p>\n A multi-vintage blend from 2014-2018 that combines continuity and complexity.
