\nThe 2010 H\u00e9loise unfolds a fascinating bouquet of sweet nuances of pickled cranberries and dark cherries, complemented by earthy hints of truffles and fine pralines. Accents of black olives join in, distantly reminiscent of tree bark and undergrowth, spiced with a charming portion of rosemary, juniper and lavender. A seductively complex character that hints at an exciting taste experience from the very first sniff.
\nPalate
\nWhen tasted, the H\u00e9loise evokes dark chocolate on the tongue that elegantly finds its way, a balance between tannin and acidity that, despite its presence, is perfectly tamed thanks to the lush and sweet fruit aromas. Its apparent accessibility should not hide the fact that this wine has considerable evolution and maturation in it. On the finish, one again senses that typical freshness, the characteristic hallmark of Ch\u00eane Bleu.
\nFood recommendation
\nFor a harmonious food accompaniment, dishes such as risotto with mushrooms and chestnuts, a braised leg of lamb ideally served with black olives, or a roasted woodcock accompanied by foie gras and a refined Civet sauce are recommended.
