Wine information
The grapes for the Silvan sparkling wine come from a 40-year-old plot. Only the first 50 % of the extracted juice, which was obtained without heavy pressing, were used for the base sparkling wine. The wine was matured in stainless steel tanks with biological acid reduction. The base wine for the sparkling wine remained on the lees until April 2019 and was then bottled for the second fermentation, where it remained for 36 months before being disgorged.

Nose
The Silvaner Brut Nature is an elegant mature foamer that smells of shokupan with butter, nuts and flowers supported by some vegetal notes, of herbs, ripe apples and pears.
Palate
On the palate, the sparkling wine appears ripe in fruit and pleasantly chalky in texture. The mousseux is present from the start without foaming up. Here, too, the Silvaner of brioche, of lightly roasted nuts, some earth and crumbly apple. There is a subtle extract sweetness in this otherwise pleasantly dry, creamy and lively sparkling wine.
