This expressive wine holds its pride of place on moderately north-sloping, rocky terrain close to a historic basalt quarry. It owes its rich flavour to the high levels of ripeness and low yields that give it impressive substance. In addition, partial ageing in previously used oak barrels enhances the complexity of its structure and the addition of whole clusters during fermentation preserves its dense texture. Each grape was also harvested by hand. Produced were 1117 bottles of 0.75l, 60 bottles of 1.5l, 12 bottles of 3 litres and 6 bottles of 9 litres.
Colour and aroma
This wine is a radiant, medium golden yellow. Initially rather reserved, the bouquet unfolds its full potential after pouring into a decanter and a few hours of aeration. It is reminiscent of subtle quince aromas, pear, the zest of lemons, verveine and also reveals the skilful use of oak in the form of lightly toasted hazelnuts and subtle light brown leather essence. The result is an extraordinarily harmonious, elegant wine that impresses with its generosity.
On the palate, the 2020 Pinot Blanc Basalt reveals its fine fruitiness, which, paired with its salty and mineral structure and nutty finish, makes for a very special experience. A fresh citrus note rounds off the taste experience. With further maturity, this wine will accentuate its Burgundian characteristics even more. To develop its full flavour, the wine should be aerated and served from large glasses.
A feta cheese in caramel and black walnuts, oranges and wild mint would go well with this wine. Likewise, roasted salmon with a ginger-lemon salt sauce or saddle of veal with wild rum mushrooms, served with a Pinot Blanc lemon butter and quinoa, would harmonise perfectly.
