The 2021 Waz-K Pet Nat consists of 70% Chardonnay and 15% Sauvignon Blanc and Viognier. The vines are estimated to be 15 years old and, of course, harvested by hand. A yield of 40 hectolitres per hectare was the result in 2021.
Gentle and early pressing without maceration or similar measures. The alcoholic fermentation takes place in large barrels before the assemblage finds its way into the bottle for the second fermentation.
Degorgement takes place manually and is bottled without additional use of sulphur.
Color
Bright lemon yellow with slight cloudiness, consistent foaming mousseux and active perlage.
Nose
The nose is initially dominated by yeasty and nutty components. Freshly chopped almonds, some marzipan and green walnut stand out. White flowers such as jasmine, acacia and also a little lilac give it a very delicate, fragile note that nevertheless exudes enormous appeal. Freshly baked yeast plait with sultanas, almonds and sugar icing coat all these impressions gained. Yellow and green apples provide earthy, fresh and ripe attributes. A hint of lavender rounds off the nose with a hint of ethereal and floral notes.
Palate
On the palate, the carbonic acid takes over at first. The mousseux then piles up on the palate and creates a melting impression. It takes up the entire mouth. However, one should not lull oneself into a sense of security for too long, because it goes in the other direction again. The acidity kicks in again and literally cuts through the mousseux. It develops a linear note, but one that still hints at the yeasty and subtly buttery flavours. With finesse, coolness and minerality, it now plays on a much more elegant side. The aromas of almonds, apples and marzipan interact playfully. The finish is very bright and clear. Enormously stimulating to drink.
