Information about wine

The Voladeros is the first wine from the Sierras de Málaga since the end of the 19th century. The Pedro Ximénez vines for this wine come from the historic Santo Pitar and Lagar de Rovira vineyards, planted in 1902 and 1960 respectively, with bush vines surrounded by oak woods and scrub. They are located at an altitude of around 1,000 metres in the mountains above Málaga. The plots are 0.59 and 3.36 hectares in size and slope from 46 to 76 %. The subsoil is around 600 million years old and cannot be clearly classified geologically at all. It contains greywacke, shale, cooled magma, quartz, limestone and also sandstone. The topsoil has just 0.73 % of organic matter. The Voladeros is made from the free-run juice and aged in new 500 and 600 litre French wood for nine months.

Nose

Pedro Ximénez is one of the great unknowns among the Spanish white wine varieties, especially when it is vinified dry. What is in the glass, however, seems so clear and so fresh already olfactorically, yet elegant and animating to drink, that one involuntarily asks oneself why one does not have something like this in the glass more often. It smells of crisp pome fruit, blossoms of oranges, almonds and a hint of white lilac. In addition, there is orange zest, herbs and some damp stone.

Palate

The palate is characterized by fine texture and powerful vitality. Here, ripe stone and pome fruit notes combine with a little pineapple, caused by the wood aging, and again with herbs and flowers. The wine is full, complex and long, silky and wonderfully fresh and lively. What is perhaps most impressive is the extraordinary harmony in this wine, which is difficult to describe, and which elevates it above quite a few of its competitors. Once tasted, it is clear that this bottle will not be the last.
