Nose:
On the nose, Matthieu Barret's pure Syrah vinegar is joyfully fruit-driven with notes of cherry, cherry pit, sloe and marzipan. Black pepper and allspice add up to the spicy accents of this naturally fermented vinegar.
Mouth:
On the palate, the red wine vinegar is far spicier than the fruity nose initially suggests. Deep and animating with dark spice and refreshing acidity, it matured for four months in the oak solera before being filled unfiltered.
