After the Wiliam pear, this double brandy made from fermented plums from south-western France is Jean-Paul Metté's most popular distillate. It is aged for at least 12 years, 3 of which are in oak barrels. A particularly soft, harmonious Eau-De-Vie d'Alsace. The 3 years in oak barrels give the Vieille Prune its characteristic colour. Tasting note by Emmanuel Nasti Immaculately clear with brilliant gold reflections. The nose initially shows light toasty aromas as well as vanilla and then develops toasted aromas. The palate is firm, dense, fully ripe with a lovely acidity that is pleasantly dry on the palate. Emmanuel Nasti, head sommelier and co-owner of the starred restaurant Le Chambard in Kaysersberg, is a border crosser. An architect by training, he has devoted himself to his passion, excellent cuisine and wine, since 1995.
