Bright straw yellow, bright reflections
Nose
The nose seems ambivalent. Quiet and reserved, it reveals exotic fruits like lychee, passion fruit and honeydew melon. Grapefruit, lemon and bergamot have a complementary effect. On the other hand, it shows hay, dried herbs and clear character traits of the long yeast ageing. The Sierra de Malaga is known to be high in the mountains and thus in much cooler climes than the well-known beach promenades of the south. Inviting and shy at the same time.
Palate
On the palate, it is enormously juicy and full of finesse. The slender 12.5% suits it very well. Cool, straightforward and without frills. The Pedro Ximenez does not tend towards excessive haptic excesses, but rather stands for purism and a clear expression of soil and origin. With a minimal acidity level, it nevertheless shows lightness, esprit and plenty of drinking flow.
