The Trasnocho is a classic cuvée of 90% Tempranillo, 5% Graciano and 5% Viura & Malvasia. A special technique was developed for this wine to ensure an oxidation-free extraction of the tannins. To achieve this, a PVC water bag is suspended in the mash, thus pressing 70% of the juice from the grapes without extracting unwanted tannins through excessive mechanical manipulation of the pips. The grapes from 60-year-old vines are harvested by hand in 12 kg crates and stored in cold chambers for 24 hours before fermentation. This is followed by another meticulous selection of the grapes on the sorting table and separation of the grapes into shoulders and tops. Spontaneous fermentation in small stainless steel tanks and 7000 litre barrels followed by ageing for 21 months in 100% new French oak.

Nose
The nose wraps you directly around its finger and transports you immediately to a Moroccan bazaar Its ethereal balsamic top note recalls sandalwood and noble spices, black cardamom, pepper and vanilla mingle with liquorice, tobacco and freshly brewed mocha. Behind this multi-layered kaleidoscope of aromas, the red fruit sparkles profoundly as if from 1001 Nights. Black cherries, mulberries and dried plums fill its fruit basket.
Mouth
On the nose, the 2014 Trasnocho Reserva from Remírez de Ganuza is multi-layered, deep and complex. The mouthfeel is currently determined by the generous use of new wood, which is, however, no less generously underpinned by extract-rich, dark fruit. This is a sure indication of the long bottle ageing for which the Trasnocho is designed. The youthfully dense tannin, tightly woven and low-pile is interwoven with red fruit pith and fresh acidity that pulses through the wine like lightning in a summer thunderstorm. With good pressure and cathedral depth, its flavours unzip like a Win-Zip file with epic length.
