This enviable sparkling wine is a blend of Chardonnay, Pinot Blanc and carefully pressed Pinot Noir.
Expansion:
It proudly presents itself after a whole-dove pressing on the basket press. Its first fermentation took place spontaneously in used tonneaus and barriques, accompanied by a year on the full lees, without batonnage or fining. The second fermentation was also spontaneous in the bottle, with a modest sugar addition of 24g/L and no use of additives such as shaking. The bottles were shaken by hand and disgorged in December 2021 at a warm temperature, with no dosage or sulphur.
Optics:
The colour of the sparkling wine is a blazing golden yellow, its perlage lively and widely diffused.
Scent:
The 2017 sparkling wine from Forgeurac impresses with its pure elegance and exquisite finesse on the nose. Citrus fruits, apple peel, quince, pear and almonds meet a delicate aniseed note. This orchestra combines with yeasty notes, brioche and mussel shells. The finest toasted notes give it structure and articulation, impressions that result from the extremely skilful use of wood.
On the palate:
On the palate, the sparkling wine is completely invigorating; the salty citrus note combines with the sparkling carbonic acid and excellent grip that we are used to when we think of Uwe Lange and Marco Pfliehinger. The spicy undercurrent in the invigorating aftertaste makes this sparkling wine an exquisite aperitif and partner for fine delicacies. It is hardly necessary to mention that this sparkling wine plays at champagne level - that is typical of Forgeurac.

Enjoy this sparkling wine with baked camembert, roasted almonds and Castelvetrano olives or as an accompaniment to oysters with herb breading and scallops with roasted fennel or spicy lemon tuna steak.
