Nose
The 2017 Totem smells intensely of blackberries, blackcurrants, sloe and elderberry pulp. The fresh, tart fruity aroma is accompanied by clear sage and pine notes, rounded off by pepper and juniper.
Palate
On the palate, it reflects a fine minerality that combines with an equally fine fruit and herbal spice. Its tannin and acid structure seem polished and at the same time stimulating. It is best enjoyed slightly chilled with grilled dishes of all kinds, as its juicy fruit harmonizes wonderfully with the roasted notes of the preparation.
