Information about the vineyard
The soil is characterised by its loamy, sandy composition. It is relatively flat, with volcanic elements and a high proportion of quartzite slate.
Refinement information
A carefully balanced blend of Müller Thurgau (55%), Pinot blanc (20%), Sylvaner (10%) and Chardonnay (15%) is fermented to 100% together on the skins, along with 50% of the crests. Fermentation takes place in concrete, where the wine remains on the fine lees until bottling. There is no fining and no filtration.
Colour-
Bathed in the echo of a hazy apricot sky, silver reflections dance on the surface.
Nose-
The 2021 Tonsur leaves a beguiling, profound impression. Symbols of apricot, lemon peel, wild sage, yarrow, verveine and fresh ginger merge into a complex kaleidoscope of aromas. A touch of yeasty freshness gives the bouquet a refreshing lift.
Palate-
This delicious drop impresses with its fruity juiciness and fine spiciness, which makes it the ideal accompaniment to food. But it also cuts a fine figure as a soloist - before you realise it, the bottle is already empty. This is certainly due to its moderate alcohol content of only 11.5 vol%. An inspiring wine that seduces and invigorates with its beautiful drinking flow.
Food recommendations-
Try it with a salad of blood oranges and young onions with a drizzle of pistachio oil. Orecchiette with preserved lemons, fennel, olives and mussels open a culinary symphony. As a third option, we recommend rabbit with spicy red cabbage coulis, roasted almonds and a cream sauce. Enjoy the variety and the interplay of flavours.
