Information about the wine:

The Tonsur white is a blend of the grape varieties Müller-Thurgau (60 %), Pinot Blanc (20 %), Silvaner (10 %) and Chardonnay. The vineyard is located at an altitude of 700 meters, a 0.4 hectare small plot is used, which is characterized by loamy and sandy topsoil on porphyry with a lot of quartzite in the subsoil. The grapes were fermented to 50 % with Rappen on the mash in concrete and then aged in concrete on the fine lees. 

Color:

light golden yellow, slightly cloudy

Nose:

At Tonsur white by Martin Gojer you can literally feel the abandonment of sulphur, and you can also smell the extended mash time in the form of hops and meadow herbs, apples and quinces including peel, grapefruits, fresh ginger and blond tobacco, almonds and nuts. 

Palate:

On the palate the Tonsur exceedingly lively and fresh, it is full of pure energy. The extended maceration time provided a grippy texture. Again, the wine delivers bright and fresh aromas of grapefruits and lemons, complete with zest, crisp apples and pears, also complete with zest, as well as a bit of iced tea - self infused from Darjeeling and not sweetened. The Gemischter Satz is a tonic wine that you don't want to let go of once you've put the glass on.
