Wine information
The Toison d'Or is a pure Pinot Gris from Guillaume Sorbe. The fruit comes from plots in Reuilly with vines on predominantly clayey-limestone soils, but also on soils with pebbles and red sand. After spontaneous fermentation over three years, the wine was aged partly in tank but mainly in used 400 and 600 litre barrels. Since the 2018 vintage, the Toison d'Or as Vin de France declared.

Nose
Guillaume Sorbes Toison d'Or was originally intended to be a rosé, because in Reuilly rosé is produced from Pinot Noir and Pinot Gris. But after 20 months of ageing, it was clear that this should remain a single-varietal Pinot Gris. It impresses with notes of flowers and a little pink pepper, dry earth and crisp apple as well as pears, some hay and herbs.
Palate
On the palate, the Pinot Gris is clear as a bell and bright with fine juiciness and freshness, a fascinating tension and acidity structure along with pleasant spiciness and slight sharpness, good volume and a calm, manner. This is a Pinot Gris full of character that rarely exists in this clarity, freshness and sensitivity.
