Wine information
The TO is a cuvée of Chardonnay, Sauvignon Blanc and Welschriesling. Heinz Velich has chosen a Hungarian name. Toto be precise, actually Tómeans See in Hungarian. Velich sees this cuvée as a homage to Lake Neusiedl. He builds the TO after spontaneous fermentation in large wood. Here, yeast is just as much a part of the game as a very slight oxidation and certainly also an extended maceration period.
Color
Medium straw yellow with light copper reflections
Nose
The TO is certainly one of the most individual white wines of Lake Neusiedl. Already the attack is special with the interplay of iodine and herbal spice, salt lemons and juice oranges, a little stone fruit, apples and a hint of apple cider as well as some tart notes of zest, some yeast and honey.
Palate
On the palate the TO then full and juicy with yellow fruits, creamy and with fine melting, a little lime and chalk, herbal spice and white berry notes. In addition, there is a discreet extract sweetness, some yeast and a fine spiciness. Something very special about this wine is its openness and inviting nature, furthermore the stunning salinity and citric astringency in the finish, which is accompanied by a slightly electrifying minerality. This is truly a distinctly individual and beautiful wine.
