Wine information
The Pinot Noir comes from the 0.31 hectare parcel in Carelle sous la Chapelle, which since 2006 has actually been only Carelles means. It is a medium slope site with ferruginous clay and limestone and limestone blocks in the subsoil. The average age of the vines is 18 years. Fermentation was in open vats for about three weeks and ageing in barrels for 20 months. The proportion of new wood was 30 %.

Nose
The Volnay 1er Cru »Carelle sous la Chapelle« 2019 is a Pinot Noir that is still reserved on the nose, but clear and elegant. White and violet flowers and garden herbs surround a very slightly sweet core of ripe cherries and wild strawberries. One finds a little sous bois and a hint of nougat, and you can also feel the higher new wood content.
Palate
On the palate, the wine appears very elegant and clear with a mixture of juicy, fresh but ripe and very slightly sweet fruit, some dark chocolate and allspice. This is a noble Volnay that strikes exactly the right balance between ripeness and freshness, earthiness and high notes. Thomas Bouley then packs the whole thing together in one pour with a fine-grained tannin and a coherent acidity. This has a lot of finesse.
