The house Recaredo was founded in 1924 by Josep Mata and is today one of the leading private cava producers of finest boutique cava. Even today, many production steps are carried out as they were back then. The Cavas mature under cork instead of crown corks, each bottle is shaken by hand and later gently disgorged without icing the neck of the bottle. All Cavas of the house are filled without dispatch dosage as Brut Nature. For several years now, the house has been using biodynamic practices in their vineyards in the high altitude Alta Penedès, the part that is ideal for producing elegant cava. The Terres Gran Reserva Brut Nature is a cuvée of 46% Xarel-lo, 36% Macabeu and 18% Parellada and aged on its lees for 34 months before disgorgement in early 2020.

Nose

The 2016 Recaredo Terres Gran Reserva Brut Nature exudes tremendous tranquility. The multilayered and complex nose takes a while to fully grasp the wine. At first, it oscillates between fruit and pastry. An apricot tart with slightly salty shortbread comes quite close, but is then soon put in its place by an herbaceous cascade of anise and chervil, until a cheeky quince slips into the picture and begins to tell of candied orange peel and biscuits. Over all this hovers the morning scent that bakeries used to exude around four in the morning.

Mouth

On the nose, it is carried by a fine bubbly mousseux and charming extract sweetness, on the palate it is tidy and full-bodied, the overall impression characterizes it as an immensely vinous type that doesn't care at all about the aperitif situation, clinking glasses and white jackets. He is all about the great art at the richly set table. The acidity mild and the fruit framed by notes of wild fennel and sage, it is tartly flanked by animating phenolics and filigree oxidation. On the palate, it slowly builds pressure and reveals its complex layered creamy texture and persistent length that unmistakably calls for great cuisine with a calm and firm voice.
