Info

The blend consists of 57% Chardonnay, 29% Pinot Noir and 14% Pinot Meunier. After the 2002 harvest, the first fermentation of the base wines took place in wooden vats. Malolactic fermentation was not forced. In July 2003, the wine was drawn into the bottle. The degorgement took place on 27.9.2018 and the dosage of this Brut Nature is 0g/l.

Color

Sparkling lemon yellow, very fine perlage and creamy mousseux

Nose

Wow! The fifteen years on the lees until the degorgement in September 2018 make for a monument of wine. Its expression of character, origin, identity and great elegance is unique. The nose reveals toasted hazelnuts and almonds. The enormously long lees ageing spreads an absolute feeling of well-being through the smell alone. Yellow and green apples in all facets. Brioche spread with butter. Almond pastries and shortcrust pastry. One's thoughts drift away completely. Lemon tart with baked meringue. And always, behind the countless flavours and nuances, there is a wall of pure chalk and filigree. You can hardly wait for the first sip.

Palate

Already on the palate, it really puts the pedal to the metal. A great combination of maturity, yeast autolysis and minerality. The mousseux shapes the first moments in a creamy and opulent manner. No sooner has the melting reached its peak than its balanced acidity sets in and provides a tightrope walk. The acidity harmonises brilliantly with the fabulous minerality. Lemon and apple aromas provide the freshness kick. The maturity of the wine is undeniable. But absolutely matured with dignity and just the right dose in this construct. The mouthfeel is elegant and delicate. The finish clings endlessly to the palate. Sensationally good wine.
