This Syrah belongs to a new generation of wines at Philippe Gimel, which are even more responsive to individual terroirs, such as the 350-meter-high Entrevon vineyard, where the Syrah stands on sandy soils from the Miocene on the north side of Mont Ventoux. Harvested on September 15, the Syrah was destemmed and fermented for 15 days before being aged for 18 months in used tonneaux and stainless steel.

Nose
Wonderfully fragrant and complex, this Syrah presents itself on the nose. At first, a few reduction notes dominate like flint, but also a little tar. With air one finds blueberries and a little cassis in the nose, dark chocolate and mocha, pepper and meaty notes as well as ground stone.
Palate
On the palate, this is a spectacular Syrah from Ventoux with cool-looking fruit. This is really about maintaining the freshness and coolness of this north-facing site. Acid-driven plums, again blueberries and cassis combine with graphite, stone, beetroot and violets to create a coherent overall composition with punchy but ripe acidity, supple but thoroughly distinctive tannin and a juiciness that is arguably unparalleled among the single-varietal Syrahs of the south.
