After selective hand harvesting, the Pinot Noir grapes were destemmed and pre-fermented in a cool place for one week. After the fermentation phase of also about one week, the biological acid reduction on the mash followed. After four weeks on the skins, the wine was drawn off and aged for two years in new and used barriques of French and Palatinate origin.

The Pinot Noir Tradition by Hansjörg Rebholz offers an impressive olfactory range and complexity. After all, it is something like the estate wine among his Pinot Noirs. But one might hardly believe that here. You'd think Rebholz bottled the wine in the forest, so evocative are the complex notes of wild berries, undergrowth, and warm forest floor. On top of that lies a layer of juicy sour cherries, underpinned by a concise, slightly vanilla barrique note.

Mouth:

The Pinot Noir Tradition brings a lot of power and a lot of character to the palate. The wine is juicy with present wood and an idea of vanilla biscuits, light astringency and a lot of spice. Then it becomes clear why the wine is so good. Tradition is called and settles in the estate wine area. The wine has a very down-to-earth and pithy side, which is coherent and grounded in itself and at the same time offers a lot of drinkability and harmony - an uncomplicated character that you would like to have as a buddy.
