Wine information
The wine was made from the Aligoté grape variety from a four-hectare north-facing plot above Pommard. The grapes were crushed and instead of draining the juice, it was left in contact with the skins for nine days. The wine was aged in used wood.

Nose
The nose of the Po à Po indicates a sulphur-free ageing. Wild aromas of crumbly apple with skin, aromas of hops, dried meadow flowers and chamomile tea, dried quince and apricot kernels, chalk and lambic swirl.
Palate
On the palate the Aligoté clear and detailed with a beautiful texture and freshness at the same time. The tannin is excellently matched to the melange of bright stone fruit, herbs and spices, tart notes of grapefruit peel and chamomile. The acidity has a tonic effect and combines - no surprise - with a distinct saltiness due to the contact with the grape skins, which further stimulates the flow of saliva.
