Recaredo is one of the companies that have turned their backs on the D.O. Cava. Cava and have since marketed their sparkling wines under the Corpinnat designation of origin. Located between the imposing Montserrat Mountains and the nearby Mediterranean Sea, the winery is situated in Sant Sadurni d'Anoia, the epi-centre of Spanish sparkling wine production.

Recaredo's sparkling wines are produced according to traditional methods and mature on their own lees under natural corks. All work such as riddling and disgorgement of the bottles is carried out exclusively by hand, and all wines are vinified as Brut Nature without dosage. The 2015 Serral de Vell Brut Nature is made from 55% Macabeu and 45% Xarel-lo and matured on the lees for 67 months before being disgorged on 06 September 2021. The long yeast ageing is an absolutely unique selling point of Recaredo.

Bright straw yellow with persistent perlage.

Nose

Multi-layered and complex, the 2015 Serral del Vell by Recaredo oscillates on the nose like a kaleidoscope, constantly revealing new facets of its dazzling character. Initially, notes of the long yeast ageing predominate and are reminiscent of salt-buttered toast and crushed oyster shells. This is followed by herbal tea and the oils of lemon zest, subtly linked by distinctive notes of wet blackboard chalk. On the whole, the appearance is characterised by immense inner calm and balance.

Mouth

On the nose, it is gripping and demanding, driven by its distinctive phenolic with animating bitters and herbaceous aromatics. On the palate, the delicate mousseux is like crystalline, sparkling stardust, rounded off by Mediterranean herbs such as rosemary and lemon thyme. Underpinned by relentless saline minerality, it has the effect of a gently pulsating, warm bass with enormous length on the palate. Great sparkling wine.
