Nose
Cyril Bonnet hits the nerve of the time with his Seconde Nature. The cuvée from the three classic grape varieties of Champagne appears clear and precise. Lemon zest and limes meet roasted hazelnuts and wet chalk. Likewise one finds yellow and green apples, damp stones and freshly cut garden herbs. In the background some biscuit sounds now and then to the described flavours. This Champagne from Chamery is filled without additional sulfur and shows itself extremely open in the nose.
Palate
As Brut Nature, it has to do without dosage and additional sugar. For this style, it is even surprisingly flattering dry, but not meager. The citrus fruit is enormously juicy on the palate. Acidic peaks add a lot of freshness to each sip. The aromas of herbs fade into the shadows. The perlage is enormously fine and elegant. The Seconde Nature is totally animating. The minerality is very present in the finish and fills the moment. In the aftertaste, it makes you think wonderfully of lemon tenderness with caramelized meringue.
