François de Nicolay is the name of the Négoce business under the management of the family-owned Domaine Chandon de Briailles in Savigny-Lès-Beaune on the Côte de Beaune. This means that only wines are produced and sold that do not come from the estate's own land. The grapes, musts or wines used for this come from certified organic or biodynamic vineyards or plants that are in conversion. The wines are matured in the cellar of Chandon et Briailles and marketed under their own label.

The Savigny-les-Beaune "Les Vermots" comes from the parcel of the same name with vines averaging 30 years old with a planting density of 10,000 vines per hectare. Grown on clay and limestone soils, it combines the ripe fruit of Chardonnay with mineral freshness. It was fermented without added yeasts for one to six months before being aged in barriques for another 12 months.

Nose

Fine herbal notes of lemon balm, anise and sorrel float above, the chalky foundation reminiscent of wet river pebbles and standing on raked gravel paths in lush botany in front of modest domaines in Burgundy after a warm summer rain.

Mouth

The palate is expansive in keeping with the vintage, with generous fruit and solid structure on the entry. The fruit is ripe and unmistakable, the tannins discipline its jovial exuberance and the acidity orchestrates the overall appearance, which already offers great Burgundy pleasure.
