Description of the wine
This impressive Pinot Noir comes directly from the famous premier cru site of Les Lavières in Savigny-lès-Beaune, one of the most extensive vineyards in this area. The Les Lavières site, named after the flat limestone boulders that once acted as roof tiles, "Laves", slopes towards Pernand-Vergelesses. Domaine Chandon de Briailles is the proud owner of 2.61 hectares of this topographical delicacy, which presents an extraordinary variety of soil types - from sandstone and sand to marl with ferruginous pebbles and reddish-brown crumbly limestone. The wine is fermented spontaneously in wood cuve with a high percentage of whole grapes, followed by about 14 months of ageing in barriques and tonneaux.

Fragrance experience
A deep breath of this Pinot Noir first surprises with a floral hint of peonies and violets, followed by an explosion of fruity and spicy notes. Fresh and preserved red and dark berries, sweet cherries and traces of sour cherries and blood oranges surround the nose. Fine notes of fresh yeast dough and forest floor perfectly round off the olfactory picture.
Taste profile
On the palate, Les Lavières is velvety and slightly lactic, in keeping with its provenance, but brings more richness and strength to the 2018 vintage than its more delicate 2017 predecessor. Ripe, polished tannin and slightly cool, ripe green notes produced by the raisins form the core of the palate experience. Forest fruits, especially blueberries, play the leading role and present themselves as fresh as if they had just been picked from a Swedish forest. The long finish is slightly salty, even a little peppery, and leaves a lasting impression of masculinity, light earthiness and fullness.
Culinary companions
This wine would be an excellent complement to sauteed venison loin with fiery dried plums or homemade tortellini stuffed with duck and roast jus sauce. Or try it with a succulent potato gratin sumptuously topped with Taleggio cheese and served with truffled mushrooms.
