Tasting note from from 10.12.2021, Copyright Sebastian Bordthäuser

The cuvée from a total of 55 parcels from 13 vineyards is the signature wine of the winery. With around a quarter of the production volume, it always offers the best possible reflection of the vintage. Grown in sites such as Zieregg, Grassnitzberg, Sernau, Hochkittenberg, Eckberg, Wielitsch, Sulztal & Ottenberg, each parcel is vinified separately. Year after year, this conglomerate of sites, combined with the winemaker's handwriting, results in a wine that optimally reflects the potential of Styrian Sauvignon blancs. Selectively harvested by hand, the grapes are left on the skins for a while for aromatic extraction and for the necessary grip before the must begins to ferment spontaneously. Matured to 70% in steel and to 30% in large wooden barrels, it always offers joyful drinking pleasure without big question marks, even in the local wine category.

Color

Light yellow with green reflections.

Nose

The 2020 Kalk & Kreide Sauvignon blanc from Weingut Tement is enormously disciplined on the nose. Instead of cheeky primary fruit, it tells of the maturation, the grape variety and, of course, Styria in a quiet but confident voice. He focuses on the structural and aromatic cornerstones of the variety, which are mainly in the green-vegetable range. The citrus fruit oscillates in the direction of wood sorrel in alliance with grapefruit and elderflowers and is underpinned by fluffy yeasty notes. The melange of brilliance and nonchalance in one goblet allows a low-threshold entry into Tement's world of Sauvignon blancs.

Mouth

With good tension on the nose, the cards are directly shuffled - it's all about structure, pressure and drinking pleasure. With fine grip and polished contour on the palate, it is precisely crafted with fine melting and simultaneous vibration and animating length. The filigree acidic nerve extends from the nose to the lasting and salty finish.
