Wine information
The name Les Chasseignes stands less for a particular vineyard than for a type of soil that is actually Caillottes is called. It lies below the layer of the Terres blanches and is characterized by Calcaire à Astéries from fossil starfish as well as the Calcaire de Tonnerre, originally a very hard limestone, which has weathered to a sponge-like porous limestone. Both types of limestone combine here. Stéphane Riffault's Les Chasseignes are located in the northeast of the village of Sury-en-Vaux, at an altitude of 275 meters, facing east and southeast. He owns eleven parcels there, totalling 3.25 hectares. The vines range in age from 17 to 45 years. The grapes were harvested and sorted by hand and then pneumatically pressed very slowly. Clarification was cool and by gravity. The juice was fermented spontaneously and aged on its lees for 14 months in wooden barrels made from multiple grapes. The yeast was stirred only sporadically.

Nose
The Sancerre »Les Chasseignes" offers the scent of green and yellow apples, green pears and pure citrus in combination with ripe lemons and ground limestone. On top of that, there is a hint of kitchen herbs and white flowers. The Sauvignon Blanc is appetizing and very precise.
Palate
On the palate the Sancerre a wonderful wealth of aromas that oscillate between fruit and spice. The wine is directly present. And what impresses the most is the spiciness it possesses. Herbs, lime and salt are embedded in a creamy texture and garnished with yellow stone fruit and citrus fruits. This has real power, this is really juicy, but at the same time extremely precise, fresh and clear, this is a lot of fun and is also drunk in no time.
